Vegan Pumpkin Spice Pancakes
- T coconut flour, sifted (can subsitute for gluten free or oat flour)
- 1/2 tsp baking powder
- 1 scoop vanilla or neutral tasting protein powder (optional) (I added Quest Peanut Butter Protein Powder)
- 1/2 tsp ginger
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp sea salt
- 1-2 T granulated sweetener of choice
- 1 T flax + 3 T water
- 1/2 tsp vanilla extract
- 1/4 cup pumpkin Puree (not filling)
- 1 T - 1/4 cup dairy free milk (Soy Milk or Almond Milk)
